drinking my greens

How is your new year going? I don’t know about you, but I’ve been craving salads like whoa. After the indulgence of the holidays, a little vegetable action is not only welcomed, but necessary.

So, how have I been getting my veggies? A few different ways. In addition to daily mega salads, I’ve added vegetables to my breakfast.

Thanks to my awesome husband, I now own the world’s coolest blender. I mentioned the Vitamix in my holiday gift ideas and my cute guy paid attention. I was surprised and so excited! Now, nothing is safe in our house. What can I blend??

One thing I’ve been enjoying is smoothies for breakfast. In my smoothies, I’ve been cramming in handfuls of greens – mainly spinach and baby kale. Yes, it turns the smoothie green. No, you can’t taste the greens. Seriously.

Here’s my current favorite mix:

Green Breakfast Smoothie

1 cup almond milk (other milks would work fine too)

1 Tablespoon protein powder of choice (I like Amazing Grass Chocolate Flavor)

1 Tablespoon almond or peanut butter

2-3 handfuls spinach or kale or swiss chard

1 banana in chunks (frozen is best if you have it)
3-6 ice cubes, depending on if your banana was frozen

Blend on high until well-blended.

There are so many variations to this. I’ve added other frozen fruit, silken tofu, and raw oats (I have to get my oatmeal somewhere!).

I’ve been amazed that the smoothie will hold my hunger until lunch. It’s also impossible to not feel healthy after drinking it. You’re getting at least 3 servings of fruits/veggies!

There are tons of people out there who believe in the power of the green smoothie. It even has it’s own website!

As you can tell, I’m pretty jazzed about the green smoothie…and my blender. A very thoughtful gift led to a very healthy start to my new year. Win-win!

I have vita mix envy. I want one so bad. I drool over it and say hello every time I see it at the store. Sigh. Someday I will have one.

I’m really jealous of your vitamix! I don’t really have a blender that is strong enough to blend greens without it being a little chunky. :( But I’ve been craving a green smoothie!

Seriously, you can’t taste the greens, with just a banana to offset? Green smoothies seem so healthy but I have a little trouble making myself drink them. Maybe it’s time to try again…

You have inspired me…need to look good for vacay and smoothies might be the way to go. I will have to experiment to see if my “unfancy” blender will do the trick!

So glad you got the vitamix. We love ours. Have not had a green smoothie yet, but we love our smoothies. When I think I can get past the green I will give those a try too:)

I am so in need of new breakfast ideas. I will have to try this. Will it work with a regular blender or food processor?? I have a way harder time eating salads in the winter- they just don’t sound good to me like they do in the summer. Where do you buy that protein powder?

Yes, it’ll work in a regular blender (not sure on the food processor), though I’d stick to spinach. Kale might be a bit much for regular blender and I would hate for you to have chunks. I ordered my Amazing Grass online (I had a coupon code), but you can find that and other options at Whole Foods. The co-op has options too – but I’ve never checked it out.
